Tasting Notes
Thirty months on yeast lees has resulted in a complex wine, with a fine persistent bead. The complex toasty aroma, coupled with straw and biscuity characters, suggest a full, rich style. The palate is rich and creamy with good persistence of flavour and balanced acidity.

Winemaking Notes
The ‘methode traditional ‘was applied to this wine – beginning with whole bunch pressing. After cold setting, the racked juice was inoculated and fermented at a cool temperature. The Macedon Ranges component (25% of blend) under went full malo lactic fermentation followed by two years of yeast lees contact in tank. The Yarra Valley component was tank fermented followed 6 months yeast less contact without malo lactic fermentation. The base wine was blended tiraged in March 2004 followed by 30 months maturation on yeast lees. Riddling and disgorging took place in October 2006.
Viticultural Notes
The Macedon Ranges component is from the 2001 vintage while the Yarra Valley component is from the 2003 vintage.
