Tasting Notes
Light to mid straw in colour with a touch of green. The nose shows lifted gooseberry and passionfruit with a slight grassy edge. The palate is flesh and clean with good weight and a fresh acid finish that is very Sauvignon Blanc.
Cellaring
Drink now. This wine is best enjoyed chilled whilst young and vibrant.
Winemaking Notes
After crushing and pressing, the juice was fermented in stainless steel tanks at 15 degrees C, allowing the wine to retain fresh, vibrant fruit characters. The 2004 Sauvignon Blanc was fermented to dryness, giving an alcohol concentration of 13.5% vol. Bottled on 11th August 2004.
Viticultural Notes
The fruit for this wine was sourced from our Dalry Road vineyard and warm Maroondah Highway vineyard. The Maroondah Highway vineyard was picked on the 16th March at 13.1 Be and the Dalry Road vineyard on the 1st April at 12.1 Be.
