Winemaking Notes
This wine is a single vineyard wine made from grapes off our Yarra Valley vineyard. Produced using our Pinot Noir technique of crushing followed by 6 days of cold maceration prior to fermentation. This allows the extraction of colour and flavour from the skins without extracting hard tannins. This was followed by a 6-day hot fermentation, which included 20% barrel fermentation. Following pressing the wines were racked to barrel for malo lactic fermentation and 14 months maturation. Prior to bottling the wine was lightly filtered.
Viticultural Notes
A warm summer followed by a mild and sunny autumn produced finely structured grapes with excellent flavour definition.
