Tasting Notes
Brilliant light straw with a green edge. The nose shows classic restrained Pinot Gris fruit being a combination of ripe pear and apple. The palate is rich and full bodied with a good depth of flavour. The wine finished long with finely balanced acidity and just a touch of classic Pinot Gris firmness.

Cellaring
Two to three years.

Winemaking Notes
Ripe Pinot Gris fruit has a considerable amount of pink colour as well as developed phenolics. In order to keep juice colour and phenolic levels as low as possible the fruit was whole bunch pressed. After cold settling the juice was fermented in stainless steel. This was followed by a short period of yeast lees contact for additional complexity. After stabilization and clarification the wine was bottled on 28th July 2003.

Viticultural Notes
The 2002 / 2003 growing season was warm and very dry. This resulted in clean well-ripened fruit with good sugar and acid levels. The fruit was hand picked on the 17th April at 13.1 Be.
