Tasting Notes
The wine is light straw in colour. The nose shows lifted gooseberry and passionfruit with a hint of gunflint. The palate is flesh and clean with a dry acid finish that is very Sauvignon Blanc.
Cellaring
Drink now! This wine is best enjoyed chilled whilst young and vibrant.
Winemaking Notes
After crushing, the wine was fermented in stainless steel tanks between 10 degrees and 15 degrees, allowing the wine to retain fresh, vibrant fruit character. This Sauvignon Blanc was fermented to dryness, giving an alcohol concentration of 12% vol.
Viticultural Notes
The fruit for this wine was sourced predominantly from our Rochford's Eyton Winery vineyard, which was combined with a small portion from our Dalry Road vineyard. Fruit was picked late February-early March at 11-11.5 Be and 3.2 Ta.
