Tasting Notes
Three full years on yeast lees has resulted in a complex wine, with a persistent bead. The complex toasty aroma, coupled with straw and biscuity characters, suggest a full, rich style. The palate delivers, with some lemon zest, full fruit and a long dry finish.

Winemaking Notes
The 'methode traditional' was applied to this wine - beginning with whole bunch pressing. After cold setting, the racked juice was inoculated and fermented at a cool temperature. The pinot component fermentation occurred in French Barriques, and matured on lees for 2 months. Tirage took place at the end of September 2000, and the wine matured on lees in the bottles for the next three years. Following riddling of the yeast lees, disgorging took place in May 2004.
Viticultural Notes
The fruit for this wine was sourced entirely from our 100-acre Dalry Road vineyard. In keeping with specifications for sparkling base wines, the sugar level of the fruit was low - 11.0 deg. Baume and acid was 8 grams per litre. The fruit was carefully hand picked in the cool of the morning and transferred immediately to the winery.
