Tasting Notes
Brilliant in clarity this wine has a mid plum colour. The nose shows savoury characters combined with lifted plum and raspberry overlayed with sweet spicy oak. The palate is of a good weight with a nice integration of fruit and oak and a tannin structure which gives good length.
Cellaring
Drinks well immediately but has the acid and tannin structure to allow 3 to 4 years of cellaring.
Food
Savoury pasta dishes, Quail, Duck or Lamb.
Winemaking Notes
This wine was made using traditional techniques. The crushed fruit was placed in small open top fermentation vessels where it was hand plunged during the 10 day fermentation. After pressing the wine was matured in new and seasoned French oak barrels for 14 months. At blending the wine received a egg white fining and light filtration and was bottled on 26th September 2001.
Viticultural Notes
The 2000 Eyton on Yarra Pinot Noir is sourced from the Eyton Winery vineyard. It was hand picked in mid March, when the fruit was at 13.5 Baume and 7.0 g/L acidity.
